蛋白胨 [dàn bái dòng]

1. 英文名称：peptone，是有机化合物。蛋白胨是将肉、酪素或明胶用酸或蛋白酶水解后干燥而成的外观呈淡黄色的粉剂，具有肉香的特殊气息。蛋白质经酸、碱或蛋白酶分解后也可形成蛋白胨。在胃内蛋白质的初步消化产物之一就是蛋白胨。蛋白胨富含有机氮化合物，也含有一些维生素和糖类。它可以作为微生物培养基的主要原料，在抗生素、医药工业、发酵工业、生化制品及微生物学科研等领域中的用量均很大，可以用来治疗消化道疾病；不同的生物体需要特定的氨基酸和多肽，因此存在着各种蛋白胨，一般来说，用于蛋白胨生产的蛋白包括动物蛋白（酪蛋白、肉类）、植物蛋白（豆类）、微生物蛋白（酵母）等三种。能为微生物提供C源、N源、生长因子等营养物质。
