  1. 冷菜,又叫冷荤、冷拼。之所以叫冷荤,是因为饮食行业多用鸡、鸭、鱼、肉、虾以及内脏等荤料制作;之所以叫冷拼,是冷菜制好后,要经过冷却、装盘、如双拼、三拼、什锦拼盘、平面什锦拼盘、高装冷、花式冷盆等等。冷菜是仅次于热菜的一大菜类做法很多,形成冷菜独自的技法系统,按其烹调特征,可分为炮拌类、煮烧类、汽蒸类、膀、烧烤类、炸氽类、‘糖粘类、冻制类、卷酿类、脱水类等10大类,大类中还有一些具体的方法。说明冷菜烹调技法之多,不在于之下。所以,习惯上它与热菜烹调技法并列为两大烹调技法。
